It’s hard to believe that Thanksgiving is only a few weeks away. I like to start planning our menu in advance so that I’m not scrambling the week of to gather ingredients. This saves me the stress of having to brave busy grocery stores in the days leading up to Turkey day. Naturally we have some family recipes that are repeated year after year, but I do like to mix it up a little and try something new from time to time too. The Bacon Lover from The Baconer
Bacon lovers rejoice. This year I’m adding roasted brussels sprouts to our Thanksgiving menu and including bacon in the recipe was a no-brainer for me. Their smoked lardons (bite size bacon pieces) were the perfect addition to this easy and delicious recipe. So what’s the recipe you ask? Let me break it down for you.
Roasted Brussels Sprouts with Bacon
Ingredients
1/2 a package of The Baconer Smoked Lardons (or 4 slices of bacon cut into bite size pieces)
10-12 ounces of fresh brussels sprouts
1 clove of garlic, minced
1/4 4C bread crumbs
2 Tbs 4C grated parmesan
Olive oil
S&P
Directions
Preheat oven to 425 degrees. In an oven-safe pan, cook the bacon pieces over medium-high heat until browned. Remove bacon from the pan but allow the bacon fat to remain. Add brussels sprouts to pan, season with salt and pepper, and toss in bacon fat. Place in the oven to roast for 20 minutes. While brussels cook, combine garlic, breadcrumbs and cheese in a small dish. After 20 minutes, or when brussels are golden brown, remove them from the oven and spread breadcrumb mixture evenly over the top. Drizzle olive oil over the top and return to oven for 5-7 minutes.
