Fourth of July weekend is upon us, and if there is ever a time of year where salads are a go-to side dish, it’s summer. Watermelon is the quintessential summer fruit. It’s juicy, refreshing, and sweet, and just so good in this easy salad that has become a favorite of mine and Mike’s. It’s easy enough to make on a weeknight, and great to take to a cookout. The dressing gives it some tang, the pistachios and onions, some crunch, and the feta a little bit of saltiness that pairs perfectly with watermelon. You’ll have to bear with me on the measurements, because the amounts really depend on how many people will be eating the salad. Keep the amounts on the smaller side if it’s just for you, but if you plan to serve it to a crowd, go big. You won’t regret it!
Ingredients
Fresh baby arugula
Watermelon, cut into roughly 1 inch cubes
Red Onion, sliced thinly
Salted pistachios, shelled
Feta, crumbled or use a block cut into small cubes
Your favorite balsamic vinaigrette dressing
Directions
1. Fill a large bowl with the arugula
2. On top of the bed of arugula, layer the watermelon, the onions, then the feta and pistachios.
3. Just before you are ready to serve, top with the balsamic vinaigrette and toss.
4. Enjoy!
