I have a little bit of an obsession with chicken salad. It’s basically one of my all time favorite lunch foods. I’ve shared other recipes for chicken salad before here on the blog, but I am always on a mission to create new variations of it. For those of you who follow me on Instagram, you may have caught the post on my stories where I shared about how I’ve been following a “flexible diet” for the last several weeks. If you want to learn more about what that is, you can click HERE, but to quickly break it down for you, it means that I’ve been tracking my macros every day and if a food fits within my macro goals, I can eat it. Macros are a ratio of carbohydrates, fat, and protein. I’ve been making a pretty solid effort to eat whole/nutritious foods that are helping me reach my current physical goals, and that includes consuming lots of “good fats” like what you find in avocados. Avocado toast is another one of my favorite foods, so one day I got the idea to combine chicken salad and avocado toast into one healthy macro-packed meal. Are you still with me? Whole grain toast topped with chicken salad packed full of flavor thanks to avocados and some other fun ingredients, topped with everything but the bagel seasoning!!! If you like everything bagel seasoning, you’re going to love this recipe too.
- 2 cups of shredded chicken from a store-bought rotisserie chicken
- 2 avocados
- 1/2 a medium red onion, diced
- 1/4 cup mayonnaise
- the juice from 1 lime
- 1/2 tsp salt
- 1 Tbs Everything But the Bagel Seasoning, plus more for garnish
- *optional red pepper flakes for garnish
- 1. Add all ingredients to a large bowl and mix well, breaking down the avocado into the mixture.
- 2. Serve on whole grain toast and garnish with Everything But the Bagel Seasoning and red pepper flakes.
- Can also be served over greens as a salad or on a low carb wrap.
