I can’t believe that it’s already nearly mid-August! You guys know how much I love fall, but at the moment I’m still really enjoying this season, and not in any rush for it to end. We’ve been living our best summer lives these last couple of months with lots of pool days, barbecues, trips to the beach, and of course noshing on all of our favorite summer snacks and appetizers. I literally cannot get enough of Tex-Mex, and dips are one of my favorite quick, easy, and delicious things to make this time of year. Recently I whipped up my favorite seven layer dip, but decided to try a new twist on it. That twist came in the form of Heluva Good’s Jalapeno Ranch Dip. Their dips have always been a household favorite and they are a definite crowd-pleaser too. With flavors like French Onion, Buttermilk Ranch, and Bacon Horseradish, these dips can be paired with so many things. Chips, pretzels, veggies, wings… the list goes on. I love finding new and fun ways to use them in some of our favorite recipes.
I decided to spice my seven layer dip up a bit by using the Heluva Good Jalapeno Cheddar Dip in the place of traditional sour cream, and let me tell you guys, it was the best idea I’ve had in awhile! We like things spicy around here, so this was just the added kick that one of our favorite appetizers needed. This dip is perfect for snacking by the pool, to take to a barbecue, and even for year-round entertaining.
Here’s how I make my seven layer dip…
Kicked Up Seven Layer Dip
Ingredients:
1 can of refried beans
1 package of your favorite taco seasoning
1 container of Heluva Good JalapeƱo Cheddar flavored dip
Guacamole (homemade or store-bought works here)
1 jar of your favorite salsa
1 bag of shredded Colby Jack Cheese
Iceberg Lettuce (cut up or a bag of shredded)
1 tomato, diced
canned sliced black olives
Instructions:
- In the bottom of an 8×8 or 9×9 casserole dish, combine the can of refried beans and packet of taco seasoning, and then spread into a thin layer.
- Top with a generous layer of Heluva Good Jalapeno Cheddar Dip.
- Top with a generous layer of guacamole.
- Top with a generous layer of salsa.
- Top the salsa layer with a generous layer of the shredded colby jack cheese. I don’t measure here, because in my opinion you can never have too much cheese!
- Top the cheese with a layer of shredded/cut iceberg lettuce,
- Garnish the top of the dip with the diced tomatoes and sliced olives.
- Refrigerate until ready to enjoy. Serve with your favorite tortilla chips!
