When we returned home from our little vacation last weekend, I vowed that this week I was going to start eating healthy again. While we were in NY, I indulged in lots of cheese, donuts, and adult beverages… I mean what are vacations for? It was fun, but in all honesty, by the end of the week, my body felt terrible. It always does when I eat a lot of junk. I’m still loosely following FWTFL, as in at the moment I’m not committed to the plan, but still using the fundamentals of it on my own. So, Monday and Tuesday were low carb days for me, but for Wednesday’s regular macro day, I decided to make myself some Overnight Oats. I always forget how much I love them. With some recipes I’ve tried in the past, I have felt the need to warm them up, but this one is so good that I had no problem eating it cold. It totally felt like I was eating a treat… a healthy treat packed full of nutritional goodness that tastes like an Almond Joy candy bar!
- 1/2 cup of rolled oats
- 1 Tbs almond butter
- 1 tsp cocoa powder
- 2 tsp shredded coconut ( I use unsweetened)
- 1 tsp ground flax meal
- 1 tsp vanilla
- 2 tsp pure maple syrup
- 1/2 cup of almond milk (or milk of choice)
- 1. Combine all ingredients in a jar with a lid, and stir well.
- 2. Refrigerate overnight.
- 3. Serve as is, or top with cocoa nibs, shredded coconut, chocolate chips, and/or chopped almonds.
- Can be served cold or warm.
