You guys, I am SO ready for spring. Like beyond ready. We have been fortunate around here to get a few sneak peeks over the last month or so, but then last week we were hammered with a Nor’easter. I’m in the minority here, I know, but I actually like winter for awhile… until March hits, and then I am so over it. I just can’t take anymore snow. I need green grass, and flowers and sunshine! Since I can’t control another Nature, I’ve decided to take matters into my own hands. Last week I pulled out all of the Spring decor. That’s right, pastel colors everywhere, fresh tulips, bunnies, chicks. You get the idea. Then, in an effort to say peace out to winter and welcome spring with open arms, I ditched my hot cup of coffee, and whipped up some iced coffee using Nestle® Coffee-mate®’s new natural bliss® Honey Pecan flavored creamer.
I was so inspired by the sweet and nutty flavors of the new Coffee-mate® natural bliss® honey creamers, that this weekend, I felt the need to do some baking. Pregnancy cravings are real my friends, and I was craving carrot cake with buttercream icing. Had I been more motivated, I would have baked the cake from scratch, but I took a little help in the form of a boxed carrot cake mix. I do this often, but I still like to make my own icing. I feel like it gives a boxed cake more of a homemade feel. I decided to change up my usual go-to buttercream recipe by substituting the milk that it calls for, with some of Coffee-mate®’s natural bliss® Honey Pecan creamer, and the results were pure magic!!!
This recipe is super simple, and comes together in no time at all using ingredients you usually have on hand, with the addition of the Coffee-mate® natural bliss® Honey Pecan creamer, which you can find at your local Walmart!
- 3 cups of Confectioner's (powdered) sugar
- 1/3 of a cup of butter, softened
- 1 tsp of vanilla extract
- 2-3 Tbs of Nestle® Coffee-mate® natural bliss® Honey Pecan flavored creamer
- 1. In a large bowl using a hand mixer (or stand mixer), beat together the butter and sugar.
- 2. Add in vanilla and creamer, 2 Tbs at first, and then another if needed, as blending.
- *This should cover a 9x13 inch cake, or 2 8 inch round cakes, but the recipe can easily be doubled.
