As you can probably imagine, life has been pretty busy around here lately. Our recent move has left me scrambling to get our new house in order, and with three kids around, that isn’t always easy. Even with Max off in kindergarten most of the week now, I still have Ella and Theo at home, and even though things are slightly easier with just two, they still require a lot of my attention (which I’m happy to give it to them). Our new house has amazing “bones”. The layout is perfect for us, and the needed updates are really only cosmetic/a matter of preference… however, I want to change the paint color in every single room in the house, which I’ve quickly learned is a fairly large feat to take on. So far I have two rooms completed, and many more to go, so that has also consumed a good portion of my time. I promise I will begin sharing more of our home soon (once the boxes are cleared), but in the meantime, I wanted to share my favorite recipe for chewy toffee pretzel cookies. Nothing says home more than something freshly baking in the oven, so I whipped up a batch of these shortly after we moved in, to help give our new digs all of the cozy vibes.
The secret to these deliciously chewy cookies is to slightly under bake them. You do NOT want to over cook them, unless of course, you prefer a crunchy cookie. Otherwise, the combination of sweet toffee bits, and salty pretzels baked into a moist and chewy cookie is perfection. They’re a step up from the traditional chocolate chip cookie, and are sure to please a crowd.
- 1 stick of unsalted butter
- 1/2 cup of granulated sugar
- 1/4 cup of brown sugar
- 1 tsp. vanilla
- 1 egg
- 1 1/2 cups All-Purpose Flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup of toffee bits
- 1/2 cup of crushed pretzels
- 1. preheat the oven to 350 degrees.
- 2. melt the butter until it is just barely melted, but not 100% liquid ( I did this in 30 second increments). You don't want it to be too hot.
- 3. add butter and sugars to the bowl of a mixer and mix until combined.
- 4. add vanilla and egg, and beat just until incorporated.
- 5. add flour, baking soda, and salt, and mix on low until a dough forms. You may want to use your hands at this point to get the right consistency.
- 6. fold in the toffee bits and crushed pretzels, using a spoon, or your hands.
- 7. drop by heaping tablespoons onto a greased baking sheet, and bake for 8-10 minutes.
- *** The cookies might seem slightly undercooked, but this is what you want for a chewy cookie.
- 8. allow to cool on a rack.
