At this point, I feel like it goes without saying that my days are mostly motivated by coffee. With three kids under the age of five, a recent move, and a gig where I work from home, I need all of the inspiration that I can get. It’s pretty rare that I get much time to myself these days, but I recently made it my goal to try to get up before my kids each day, so that I can enjoy a hot cup of coffee in peace before the real chaos ensues. It doesn’t always work out that way, but when it does, let me tell you, it’s a little slice of Heaven.
Since my love of caffeine runs deep, you can probably imagine that one of my favorite desserts is also inspired by coffee. I recently whipped up a batch of these coffee toffee crunch brownies using illy coffee, and holy YUM!!! I just knew that I had to share the recipe with you guys. These brownies are super decadent, pair great with a hot cup of coffee, and would be perfect to take to a party (trust me, your friends will thank you!). The best part? They’re super easy to make.
Coffee Toffee Crunch Brownies
1 box of fudge brownie mix
1/2 cup of milk chocolate toffee bits
(oil, eggs, and non-stick cooking spray)
to make the brownies:
1. Following the directions on the box, mix your batter in a large bowl. Where the recipe calls for water, substitute freshly brewed coffee.
2. Spray a baking dish with non-stick cooking spray.
3. Pour batter into dish
4. Evenly top with milk chocolate toffee bits.
5. Bake according to the directions on the box for the size dish you choose.
6. Enjoy with a hot cup of illy coffee.
