Here in upstate New York, when summer rolls around, it’s all about eating local. Perhaps it’s because the winters are long, and there are really only a few short months when the climate is optimum for growing fresh produce. Regardless, one thing is for certain, people here love to eat healthy, pick their own fruit, and to shop the trendy local farmer’s markets. There is just something about buying locally grown produce, that inspires people to want to eat healthy, me included. A trip to the farmer’s market always motivates me to spend some time in the kitchen, and to step outside the box, from a culinary standpoint. I love trying fun new recipes that use some of my favorite fresh ingredients, and in the summer months, I can’t get enough of all things strawberry.
I’m really excited today, because I have the honor of teaming up with S. Pellegrino® to be a part of their Taste Guide Campaign, and share one of my favorite summertime recipes. S. Pellegrino’s Taste Guide Campaign launched in 2016, and it explores various U.S. cities through the eyes of acclaimed chefs and lifestyle influencers. This year they have partnered with Bon Appetit, as well as some famous chefs from around the country (such as April Bloomfield and Ludo Lefebvre), to host a culinary event in New York City. I have been a fan of S. Pellegrino® Natural Spring Water for years, so naturally I am pretty pumped to have the opportunity to work with them, and share what the local food trends look like in my area right now. Obviously it isn’t a necessity to use produce that is in season for this recipe, but I swear it tastes that much better when you do. This strawberry salsa is healthy, sweet, spicy, and fresh. It’s super simple to make, and comes together in under ten minutes. It’s the perfect summer appetizer, and of course it pairs amazingly well with S. Pellegrino®.
- 1 lb of fresh strawberries, chopped
- 1/2 of a large red onion, diced
- 1 large jalapeño, seeds removed and diced
- 1 lime, juiced
- 1/8 of a cup cilantro, finely chopped
- 1. Combine all ingredients in a large bowl and lightly stir them together.
- 2. Place bowl in the refrigerator and allow flavors to blend, for about 30 minutes.
- 3. Serve with your favorite tortilla chips and enjoy!
